Lavender Herb Roasted Chicken

This French-inspired roasted chicken is the kind of dish that fills your kitchen with the most incredible aroma. Ingredients

  • 1 whole chicken (3–4 lbs)
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon dried culinary lavender buds, finely crushed
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 4 cloves garlic, minced (plus 1 head of garlic, halved crosswise)
  • 1 lemon, zested and halved
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh lavender sprigs, for garnish (optional)

Directions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, combine the softened butter, crushed lavender buds, rosemary, thyme, minced garlic, lemon zest, salt, and pepper. Mix until well combined.
  3. Pat the chicken dry with paper towels — this is the key to crispy skin.
  4. Gently loosen the skin over the breast and thighs with your fingers. Rub about two-thirds of the herb butter directly under the skin.
  5. Rub the remaining herb butter all over the outside of the chicken. Drizzle with olive oil.
  6. Stuff the cavity with the halved lemon and halved head of garlic.
  7. Place the chicken breast-side up in a roasting pan or cast iron skillet. Tie the legs together with kitchen twine if desired.
  8. Roast for 60–75 minutes, until the skin is deep golden brown and the internal temperature reaches 165°F (74°C) at the thickest part of the thigh.
  9. Rest for 10–15 minutes before carving. Garnish with fresh lavender sprigs if desired and serve.
